WHAT IS
WAZEN BEEF ?
Wazen beef is raised in the nature-rich areas of Tome City in northern Miyagi Prefecture and Fujisawa Town in Iwate Prefecture. Historically, these regions have been known for their thriving livestock industry and are nationally renowned as major beef production areas.
Wazen beef is raised from birth as healthy crossbred calves born in Miyagi, Iwate, and Hokkaido, consistently maintaining a 50% genetic makeup of superior Kuroge Wagyu. These calves are fed abundantly with a diet that includes straw from locally grown premium rice to build strong and healthy bodies. Following this, they undergo meticulous fattening techniques developed through years of experience to enhance meat quality. In the barns, meticulous attention is paid to maintaining a hygienic environment. The cattle are raised stress-free, allowing them to grow slowly and steadily, resulting in finely textured meat.
Wazen beef offers a perfect harmony of moderate marbling and the rich taste of lean meat, making it ideal for various beef dishes around the world, not just Japanese cuisine. One of the key factors in the meat's deliciousness is the fat, known for its 'melt-in-the-mouth' texture and rich flavor. The fat in Wazen beef is notable for its nutty aroma, reminiscent of macadamia nuts. It boasts a light yet deep flavor profile, ensuring an enjoyable and consistently delightful dining experience.
Wazen Beef is raised "Monensin Free" without the use of antibiotics or growth hormones, utilizing the same meticulous care and feeding methods as Wagyu. Monensin, a type of antibiotic that helps regulate the rumen environment and promote cattle growth, has been widely used as a feed additive for many livestock in recent years. However, we strive to provide consumers with safety and peace of mind by raising healthy cattle through meticulous feeding management without relying on such additives. Rich in palmitoleic acid, Wazen Beef is a favorite choice for the health-conscious gourmet, delivering unparalleled quality and health benefits.
OUR PRIDE
Wazenbeef is raised in the nature-rich areas of Tome City in northern Miyagi Prefecture and Fujisawa Town in Iwate Prefecture.
In the rich natural environment of these agricultural regions, we manage approximately 11,000 cattle by expanding the size of our barns to reduce complexity. This allows us to ensure thorough management and observation of each cow.
While most farms typically have dirt or gravel surfaces, the ranch features concrete and asphalt paving, creating a clean, dry environment that is easy to walk on, even in light footwear.
The cattle are relaxed and are raised in a stress-free environment that adheres to animal welfare standards.
The ranch is particular about the feed, using dent corn silage, also known as field corn, and rice straw sourced from Miyagi Prefecture. Few nearby ranches use dent corn silage, which involves finely chopping the entire plant, including the cob and kernels, and allowing it to undergo lactic acid fermentation over several months. Both dent corn silage and rice straw have high nutritional and energy values, playing a vital role in promoting the healthy growth of cattle.
Generally, beef farmers raise calves that are less than 7 months old. However, at this ranch, calves are introduced at a very early stage and raised meticulously from the start. While the typical feeding and fattening period is 24 to 26 months, we extend it to 27 to 28 months to further enhance the meat quality.
